Streusel Pear Cake
Adapted from here.
For the cake
¼ cup butter
¾ cup granulated sugar
2 eggs, separated
1 ½ cups all-purpose flour
1 tsp baking powder
½ cup milk (2% ideally)
2 large pears, peeled and washed
Streusel topping
½ cup packed brown sugar
1 Tbsp soft margarine
1 tsp nutmeg (or cardamom or cinnamon)
For the cake
Preheat the oven to 350 °F. Grease an 8-inch square cake pan (a 9-inch square pan or springform pan will do too). In a large bowl, cream together margarine, sugar and egg yolks until fluffy. Combine flour and baking powder; beat into egg mixture alternately with milk. Beat egg whites until stiff but not dry; fold into batter. Turn into prepared pan. Halve pears and arrange over top.
For the streusel topping
In a small bowl, combine brown sugar, margarine and nutmeg; mix well and sprinkle over fruit.
Bake for 35 to 45 minutes or until top is golden and toothpick inserted into cake comes out clean.

Ohhh my goodness pear love. I had one of these gorgeous pears today..and then I dropped it!!!!! It was a sad..sad day. I don't have weekday indulgences, I have "whenever I need something sweet" indulgences!
