Well, I am pretty sure you already knew that, but hey! GET excited my friends, because that only means one thing on my blog....DESSERT.
Oh heck to the YES
And because you folks are all so amazing, I will share that delicious creation (seen above) with you
It really is a simple (and amazingly good dessert)
But, before we get to the amazing dessert/celebrating dessert Friday, lets chat! How have your weeks been? Anyone on midterms like me? My reading/break week is coming up, but I won't be going anywhere....sigh.... Are you folks going anywhere for spring break? Where would you travel to if you could go anywhere in the world?!
Okay! Enough chatting.....bring on that dessert!
Icky Sticky Baked Date Pudding- Adapted from here
1 3/4 c chopped dates
1 c water
1 tsp grated orange rind
1 tsp baking soda
1/2 c butter, softened
1/3 c packed brown sugar
1 tsp vanilla
1 1/4 c all purpose flour
2 tsp baking powder
1/2 tsp salt
In a saucepan, bring dates, water and orange rind to a boil;boil for 3 minutes. Remove from heat;stir in baking soda and set aside.
In a large bowl beat butter with brown sugar until fluffy. Beat in eggs 1 at a time, beat in vanilla. In a small bowl , whisk together flour, baking powder and salt;sprinkle half over batter and fold in gently. Fold in date mixture then remainding flour mixture.
Pour into a greased 9 inch square cake pan. Bake in 350 oven for 30 - 40 minutes. or until cake tester inserted in centre comes out clean.
Transfer to a cooling rack and let cool slightly
I am in luve with dates! The sweetness is just like a dessert...kinda, not really.
But man oh man! Do they bake well into things
Especially with a touch of orange, brown sugar, and butter
I might have had a few spoonfuls
Add wet to dry
Bam! Not very pudding like...more like incredible moist cake like....
BUT then...you add a sauce...an amazingly sticky sweet toffee sauce
and pour it all over top
Hence we have, icky sticky date toffee pudding
If I would die tonight, I would like this in my belly as I go
Alright, I'm exaggerating a bit
But only a little bit.The Toffee Sauce: 2/3 c packed brown sugar 1/3 c whipping cream 1/4 c butter 1 tsp vanilla
In a saucepan bring all ingredients except vanilla to a boil, stirring until smooth.
Reduce heat and simmer for 3 mins. Stir in vanilla. Drizzle with toffee sauce
